More than eight years after his passing, Anthony Bourdain's influence continues to resonate across the culinary and entertainment worlds. From the recent animated adaptation of his comic series Get Jiro! to the A24 biopic Tony, the late chef's legacy is as vibrant as ever. Now, the Folio Society is honoring that legacy with a stunning new collector's edition of his groundbreaking memoir, Kitchen Confidential: Adventures in the Culinary Underbelly.
This deluxe release, designed by Kishan Rajani, features a sleek black-and-white aesthetic with a new cover, slipcase, and endpapers. But the real treasures are inside: 12 rare photographs taken by Jake Chessum during a 2008 two-day shoot with Bourdain in New York City. These images, many presented as double-page spreads, capture the man in his natural habitat—effortlessly cool, leaning against a taxi outside Katz's Delicatessen in his leather jacket, or savoring a hot dog with the simple joy that made him so beloved.
Chessum, known for his portraits of icons like Brad Pitt, Amy Winehouse, and President Barack Obama, perfectly encapsulates Bourdain's magnetic energy. The photos offer a glimpse of the man beyond the TV persona, showing him as a regular guy who found profound pleasure in food and the city he called home.
The edition also includes a new preface by Joel Rose, Bourdain's collaborator on Get Jiro!, who reflects on the author's unique voice. "Tony and I worked together many times, over many books, and from the day he climbed the stairs and walked into my life, I believed in his natural voice," Rose writes. "Having the opportunity to go back to Kitchen Confidential today, I cannot urge you strongly enough to make note of Anthony Bourdain’s voice, before it became a public instrument, before CNN, before the Food Network, when Tony’s power lay in the precision and intimacy of his prose, in his ability to trust himself enough to speak from both heart and mind."
Editor Mandy Kirkby echoes that sentiment, praising the book's enduring authenticity. "Told in Bourdain’s signature exhilarating, full-throttle, and sharply funny style, Kitchen Confidential remains so compelling after all these years because its pages teem with the authenticity, passion, and generosity of spirit of its iconic author," she says. "Restaurant kitchen culture has changed since its writing, but some things remain: brunch is usually a rip-off, chicken is for scaredy-cats and the undiscerning, and shellfish is a bad idea in an empty restaurant, whatever the day of the week."
This Folio Society edition is a must-have for any Bourdain fan, offering a tactile and visually stunning way to revisit a book that changed how we talk about food. It's a fitting tribute to a man who lived life on his own terms and inspired millions to explore the world with an open mind and an empty stomach.
